Some Notes

This is a collection of recipes (1048 to be exact) taken from different sources, with a big amount of vegetarian and some veggan dishes. The difference between these two is vegetarian dishes may include eggs, honey, milk or any dairy products, while veggan dishes do not include any of the previous.

Some of the recipes I've tried myself, some I plan to do in the near future, and some others I'll try whenever I have time or I feel like cooking a whole. If you try any of these recipes, I welcome any feedback, if you liked it or not, any modification you have made or any other thing you think I might want to know.

Most of the sources for the recipes are american, so measures are in ounces and pounds, and temperatures in Farenheit. For a conversion table, please click here

Mixed Mushroom and Sweet Potato Stuffing

  1. Adjust oven rack to middle position, and heat oven to 350 degrees. In a roasting pan, place sweet potatoes, olive oil and 1 tablespoon sage leaves, sprinkle with salt and pepper, and toss to combine. Roast until golden brown and tender, tossing occasionally, 20 to 30 minutes. Remove from oven, and set aside.
  2. In a large skillet, heat grapeseed oil over medium-high heat. Sauté mushrooms and red onions with thyme sprigs, stirring frequently, until mushrooms are caramelized, about 7 minutes. Remove from heat, stir 4 tablespoons butter into hot mushrooms, and discard thyme. Set mushrooms aside.
  3. Use remaining butter to coat a 3-quart baking dish. In a large mixing bowl, whisk eggs, 1 cup cream and 2 cups chicken broth together. Add bread, and stir until coated evenly. Fold in sweet potatoes, mushroom mixture and remaining herbs. If bread cubes seem dry, add more cream and chicken broth. Season with salt and pepper. Spoon stuffing into baking dish, and bake until golden brown and cooked through, about 45 minutes.
